I am French on my mother's side and Italian on my father's. You can imagine the food I grew up on & the priceless recipes that I have inherited over the years.

Ingredients
  • FILLING:
  • 1/4lb. rice
  • 4c. water
  • 2t. salt
  • 1/4lb. semi-sweet chocolate
  • 1/4lb. pinoli
  • 1/4lb. raisins
  • 1/4lb. citron; cut up
  • 1c. sugar
  • 1t. vanilla
  • Amaretto
  • 4T. cocoa
  • 3 eggs
  • CRUST:
  • 3c. flour
  • 5t. baking powder
  • pinch of salt
  • 1 stick butter; melted
  • 1/2t. vanilla
  • 1c. sugar
  • juice & rind of 1 orange

Directions
  1. FILLING:
  2. Cook rice in 4c. water adding 2t. salt.
  3. Boil 5 min.
  4. Add chocolate & melt.
  5. Add remaining ingredients & eggs.
  6. Beat slightly. Should be a soft liquid.
  7. CRUST:
  8. Make a well in flour & add all ingredients at one time.
  9. Use hands as mixture thickens & work until smooth.
  10. Divide into 3 parts & roll like a pie crust.
  11. Fill one pie plate to about 1/4" from the top.
  12. Fill with the pie filling.
  13. Roll the dough for the side (top) like a rope & crimp as you go.
  14. Bake 350F for 15-20 min. Reduce to 275F for about 1 hr.
  15. Makes 2 pies.
