Hot potato sausage and onion salad

- 500g small waxy potatoes e.g. Charlotte, peeled and halved shopping list
- 2 x 227g pack smoked pork sausage, such as Mattesons shopping list
- 1 large spanish onion, peeled and cut into 8-10 thick wedges, making sure each is attached at one end by a little bit of root shopping list
- 1 tbspn olive oil (more if the pan is non-stick) shopping list
- 1 tbspn grain mustard shopping list
- 1 tbspn red wine vinegar shopping list
- 2 tbspns groundnut or sunflower oil shopping list
- small bundle chives, chopped shopping list
- salt and pepper shopping list
How to make it
- Boil the potatoes in salted water until tender.
- Heat the sausage as per the packet instructions. Peel the skin off the sausage when it is ready, then chop into bite-sized chunks.
- Fry up the onions in the olive oil over a medium heat for 15-20 mins, turning occasionally until they are soft and brown edged.
- Meanwhile, make the dressing by mixing together the mustard, vinegar, oil and seasoning.
- When the onions are cooked, remove from the pan. Raise the heat and fry up the potatoes for about 10 mins until crisp and golden.
- Then tip the onions and sausage in with the potatoes and fry for a few minutes.
- Transfer the mix to a bowl and pour the dressing over the top and the chives. Toss thoroughly and set aside to soak in for 10 mins.
- Eat and enjoy!
