How to make it

  • Boil the potatoes in salted water until tender.
  • Heat the sausage as per the packet instructions. Peel the skin off the sausage when it is ready, then chop into bite-sized chunks.
  • Fry up the onions in the olive oil over a medium heat for 15-20 mins, turning occasionally until they are soft and brown edged.
  • Meanwhile, make the dressing by mixing together the mustard, vinegar, oil and seasoning.
  • When the onions are cooked, remove from the pan. Raise the heat and fry up the potatoes for about 10 mins until crisp and golden.
  • Then tip the onions and sausage in with the potatoes and fry for a few minutes.
  • Transfer the mix to a bowl and pour the dressing over the top and the chives. Toss thoroughly and set aside to soak in for 10 mins.
  • Eat and enjoy!
