How to make it

  • Preheat oven to 220°C, 425°F, gas mark 7.
  • Grease two ovenproof ramekins or coffee cups.
  • Melt the chocolate in a bowl with the butter.
  • Beat the egg with the caster sugar for several minutes until light and creamy.
  • Stir in the chocolate and butter mixture, then the flour and brandy. Place the raspberries in the bottom of the ramekins then spoon the chocolate mixture on top.
  • Bake in the oven for 8–10 minutes until slightly risen and firm to the touch.
