Ingredients
  • 4 idaho potatoes large, coarsely grated
  • 2 carrots, coarsely grated
  • 2 tomatoes, peeled and finely chopped
  • 1 red peppers, finely chopped
  • 1 yellow onion, finely chopped
  • 2T green onion, finely chopped
  • 1T parsley, finely chopped
  • 2 eggs
  • 3T whole wheat flour
  • 3T potato starch
  • salt and pepper to taste
  • 1/2C vegetable oil
  • optional: 1t soup seasoning

Directions
  1. Mix all ingredients well in a bowl then process lightly in a food processor to mix and chop everything uniformly (dont over do it).
  2. Use large skillet or non stick pan. Add enough oil to cover bottom of pan and pre-heat on medium heat. Add batter to the skillet in small, less than 1/4 cup drabs. Cook until golden brown then turn once to cook the other side the same way. Remove onto a quality paper towel to soak up the access oil.
  3. Add oil as needed to maintain the an appropriate amount in the pan.
