Vegetable Pancakes

- 4 idaho potatoes large, coarsely grated shopping list
- 2 carrots, coarsely grated shopping list
- 2 tomatoes, peeled and finely chopped shopping list
- 1 red peppers, finely chopped shopping list
- 1 yellow onion, finely chopped shopping list
- 2T green onion, finely chopped shopping list
- 1T parsley, finely chopped shopping list
- 2 eggs shopping list
- 3T whole wheat flour shopping list
- 3T potato starch shopping list
- salt and pepper to taste shopping list
- 1/2C vegetable oil shopping list
- optional: 1t soup seasoning shopping list
How to make it
- Mix all ingredients well in a bowl then process lightly in a food processor to mix and chop everything uniformly (dont over do it).
- Use large skillet or non stick pan. Add enough oil to cover bottom of pan and pre-heat on medium heat. Add batter to the skillet in small, less than 1/4 cup drabs. Cook until golden brown then turn once to cook the other side the same way. Remove onto a quality paper towel to soak up the access oil.
- Add oil as needed to maintain the an appropriate amount in the pan.
