This is a cracking, simple but delicious chilli. Great for a night in with friends. Chillis recipes are there to have fun with, try adding dark chocolate - red pepper - celery - mushrooms and spices.

Ingredients
  • 450g good quality steak mince (butcher's best)
  • 400g Kidney beans (preferably tinned in chilli sauce)
  • 3-4 fresh mixed chillis
  • 1 large green pepper
  • 3-4 cloves garlic
  • 1 large white onion
  • 400g chopped tomatos
  • 150g tomato puree
  • 1 beef stock cube
  • 1-2tsp worcester sauce
  • 100ml water
  • 2 tsp cumin
  • 2 tsp chili powder
  • 3 tbsp sweet chilli sauce
  • 1 tbsp brown sugar
  • black pepper
  • salt
  • TLC (tender loving care)

Directions
  1. Place the slow cooker pot on the hob or use a large saucepan and transfer later.
  2. With some extra virgin olive oil, brown the sliced onion and crushed garlic for 1 minute!
  3. Add the steak mince and brown
  4. While browning add a healthy pinch of salt and the Worcester sauce
  5. Drain any excess fat and add the stock cube, the cumin and chilli powder with a dash of water to help coat the meat.
  6. Add the chillis and green pepper, toss and sweat for a minute
  7. Add the tomato puree, chopped tomatoes and kidney beans.
  8. The black pepper, sugar and sweet chilli sauce is next to taste.
  9. Stir it in before transferring to the slow cooker.
  10. A good 4 hours of slow cooking melts those flavours together.
  11. Towards the end of the cooking time add small amounts of brown sugar, salt, pepper or sweet chilli sauce to perfect.
  12. Serve with organic easy cook rice and a couple of torilla crisps/chips.
  13. Enough for 4 people but share between 2 and freeze as it's even better 2nd time around.
