Cracking Chilli Con Carne

- 450g good quality steak mince (butcher's best) shopping list
- 400g kidney beans (preferably tinned in chilli sauce) shopping list
- 3-4 fresh mixed chillis shopping list
- 1 large green pepper shopping list
- 3-4 cloves garlic shopping list
- 1 large white onion shopping list
- 400g chopped tomatos shopping list
- 150g tomato puree shopping list
- 1 beef stock cube shopping list
- 1-2tsp worcester sauce shopping list
- 100ml water shopping list
- 2 tsp cumin shopping list
- 2 tsp chili powder shopping list
- 3 tbsp sweet chilli sauce shopping list
- 1 tbsp brown sugar shopping list
- black pepper shopping list
- salt shopping list
- TLC (tender loving care) shopping list
How to make it
- Place the slow cooker pot on the hob or use a large saucepan and transfer later.
- With some extra virgin olive oil, brown the sliced onion and crushed garlic for 1 minute!
- Add the steak mince and brown
- While browning add a healthy pinch of salt and the Worcester sauce
- Drain any excess fat and add the stock cube, the cumin and chilli powder with a dash of water to help coat the meat.
- Add the chillis and green pepper, toss and sweat for a minute
- Add the tomato puree, chopped tomatoes and kidney beans.
- The black pepper, sugar and sweet chilli sauce is next to taste.
- Stir it in before transferring to the slow cooker.
- A good 4 hours of slow cooking melts those flavours together.
- Towards the end of the cooking time add small amounts of brown sugar, salt, pepper or sweet chilli sauce to perfect.
- Serve with organic easy cook rice and a couple of torilla crisps/chips.
- Enough for 4 people but share between 2 and freeze as it's even better 2nd time around.
