Cochin Lamb Soup

- Ingredients shopping list
- lamb legs; 500 gms chopped in small pieces. shopping list
- lamb stock : 6 cups. shopping list
- Onions: 50 gms sliced. shopping list
- Garlic: 2 pods crushed. shopping list
- cloves:2 nos. shopping list
- cinnamon : 1/2" -1 piece. shopping list
- Peppercorns: 3-4 pieces crushed. shopping list
- curry leaves : 3 leaves. shopping list
- Turmeric: 1/2 tsp. shopping list
- salt : for taste shopping list
- Seasoning: shopping list
- onions finely chopped: 150 gms shopping list
- clarified butter :15 gms shopping list
- Cornflour: 5 gms shopping list
- white pepper powder for taste shopping list
- Garnish. shopping list
- shallots finely diced :20gms shopping list
- clarified butter :10 gms shopping list
- mustard seeds : 10 gms. shopping list
How to make it
- Add all ingredients in a large saucepan and bring to boil.
- Remove from the flame when the water is reduced to almost 5 cups and the lamb is cooked well.
- Strain the soup in a large sieve.Keep aside.
- In a fry pan add the clarified butter and sautee the onion kept for seasoning till brown in color.
- Add the cornflour till its done.
- Add salt and pepper and add this mixture to the soup and boil on a low flame.
- Splutter the mustards in clarified butter kept for seasoning and fry the shallots till brown.
- Remove the soup from fire and add the garnish on top.
- Serve hot.
