Sausage Potato Soup With Fresh Spinach Recipe
This is a beautiful soup with red potatoes and dark green spinach against a white soup. The flavors are traditional and likely to suit even the non adventurous although the combination of flavors will please the palattes of the discerning.

Ingredients
  • Baked red potatoes - 8
  • Cooked sweet Italian sausage - a pound
  • Milk
  • Dried onion flakes
  • Black Pepper
  • Instant Potato flakes
  • Baby Spinach

Directions
  1. Cut the baked red potatoes and sweet Italian sausage into bite size pieces and place in a soup pot
  2. Cover with milk
  3. Add onion flakes and black pepper to taste
  4. Simmer 20 minutes
  5. Thicken the soup by adding instant mashed potato flakes in about 1/2 cup increments and stirring over a period of 10 minutes
  6. Place a layer of baby spinach on top of the thicken soup and cover it with a lid
  7. Simmer for an additional 10 minutes or until spinach is warmed and slightly wilted
  8. Serve
