How to make it

  • Cut the baked red potatoes and sweet Italian sausage into bite size pieces and place in a soup pot
  • Cover with milk
  • Add onion flakes and black pepper to taste
  • Simmer 20 minutes
  • Thicken the soup by adding instant mashed potato flakes in about 1/2 cup increments and stirring over a period of 10 minutes
  • Place a layer of baby spinach on top of the thicken soup and cover it with a lid
  • Simmer for an additional 10 minutes or until spinach is warmed and slightly wilted
  • Serve
