Mexican Lasagna Recipe
This is a layered casserole that mimics lasagna using tortillas as noodles with beans and vegetables between the layers. It travels well and has been a staple at potluck suppers in my world, and rewarmed leftovers are even better than the original!

Ingredients
  • Corn or flour tortillas
  • 3 cans of beans (black, navy, kidney, pinto, whatever!)
  • 2-3 Bell peppers (frozen is fine if you need to dump and run!)
  • 1-2 large onions
  • Julienned carrots
  • A can of corn (I prefer frozen)
  • A large jar or two of Mexican tomato salsa
  • Shredded cheddar
  • Sour cream to garnish

Directions
  1. Dump one can of beans in the blender with half to 3/4 the same amount of salsa to create a sauce
  2. Saute the carrots, onions, and peppers, then add the beans and corn until all are warm
  3. Treat a 13x9 baking dish with cooking spray
  4. Layer ingredients like lasagna (From the bottom up): veggies, a little sauce, a layer of tortillas (cut them if need be, overlapping them too much makes the dish very heavy) for the bottom, then veggies, sauce CHEESE, tortillas, repeat for the remaining layers (usually 3 more)
  5. Top with a layer of cheese
  6. Bake at 350 for approximately 45 minutes
  7. remove from oven and allow the casserole to settle for 10-15 minutes
  8. Cut, like lasagne, and serve with a little Salsa and sour cream for dipping

Yes... if you have self proclaimed carnivores in your household you can add the meat of your choice to this dish, but the beans and cheese provide a good protien source without meat being necessary.
