Gingersnap Berry Cheesecake Pie

- CRUST: shopping list
- 1c. crushed gingersnaps shopping list
- 3/4c. crushed vanilla wafers shopping list
- 1/3c. melted butter shopping list
- FILLING: shopping list
- 8oz. cream cheese; doftened shopping list
- 1t. vanilla shopping list
- 1/4c. sugar shopping list
- TOPPING: shopping list
- 1/4 jar of currant jelly; melted shopping list
- 2&1/2c. blueberries shopping list
- 1&1/2c. strawberries; thinly sliced shopping list
How to make it
- CRUST:
- Mix all ingredients together & press into bottom of 8" springform pan; filling 1-1/2" from the top.
- Bake 5 min. @ 375F.
- Cool 10 min. before filling.
- FILLING:
- Beat cream cheese until fluffy. Add vanilla & sugar & beat until smooth.
- Pour into crust.
- FRUIT TOPPING:
- Spoon half of melted jelly onto filling.
- Forming concentric circles: use 1-1/2c. bluberries, all of the strawberries & the remaning blueberries (in the center).
- Brush remaining jelly over fruit.
- Chill 4-6 hours.
