Gingersnap Berry Cheesecake Pie Recipe
The slight spiciness of the gingersnaps is a nice contrast to the cool, creamy cheesecake filling. This is a much requested, family favorite. Cooking time is the chilling time.

Ingredients
  • CRUST:
  • 1c. crushed gingersnaps
  • 3/4c. crushed vanilla wafers
  • 1/3c. melted butter
  • FILLING:
  • 8oz. cream cheese; doftened
  • 1t. vanilla
  • 1/4c. sugar
  • TOPPING:
  • 1/4 jar of currant jelly; melted
  • 2&1/2c. blueberries
  • 1&1/2c. strawberries; thinly sliced

Directions
  1. CRUST:
  2. Mix all ingredients together & press into bottom of 8" springform pan; filling 1-1/2" from the top.
  3. Bake 5 min. @ 375F.
  4. Cool 10 min. before filling.
  5. FILLING:
  6. Beat cream cheese until fluffy. Add vanilla & sugar & beat until smooth.
  7. Pour into crust.
  8. FRUIT TOPPING:
  9. Spoon half of melted jelly onto filling.
  10. Forming concentric circles: use 1-1/2c. bluberries, all of the strawberries & the remaning blueberries (in the center).
  11. Brush remaining jelly over fruit.
  12. Chill 4-6 hours.
