How to make it

  • Spray lined cookie sheet with butter or olive oil spray
  • Cut chicken into nuggets and set aside
  • Take one large bowl and crumble up rice cakes into smallish pieces
  • Add Romano cheese but don't mix too much because it will fall to bottom
  • Add Basil to taste
  • Add any salt and pepper to taste
  • Set aside rice cake bowl
  • In another bowl scoop yogurt and add some egg white and mix.
  • Dip chicken in Yogurt/egg mixture and then into rice cake mixture and put onto cookie sheet. keep doing this until finished
  • Bake in oven at 325F until done.
  • You can make any kind of dip if you want. I love Trader Joe's Mesquite Honey mixed with Trader Joe's Dijon with White Wine.
