Black Bean Pasta Recipe
This is easy to make and can be made as a side dish or all by itself

Ingredients
  • 4 ribs celery, chopped
  • 2 cloves of garlic, chopped
  • 1 tsp crushed red pepper flakes (optional)
  • 2 tbsp olive oil
  • 1 can of black beans (drained)
  • 1 can diced tomatoes (drained) or 3 fresh roma tomatoes, chopped
  • 8 ounces of whole wheat penne or ziti pasta coooked
  • parmesan cheese to sprinkle on top

Directions
  1. Heat olive oil in pan and sautee celery for 2 min then add garlic
  2. Sautee for 3 more min then add beans and tomatoes
  3. Add cooked and drained pasta
  4. Continue to cook for 3 more minutes until everything is combined
  5. Remove from pan
  6. Put in a large serving bowl and sprinkle parmesan on top
