How to make it

  • wash and cut potatoes into to 1/4 inch cubed pieces
  • chop onions
  • fry potatoes in vegetable
  • after you get potatoes well on there way to cooking add onions
  • add to taste, salt, pepper, garlic powder and sugar ( this helps caramelize the potatoes)
  • cook potatoes til fork tender
  • cut sausage into about same size pieces as potatoes
  • add to potatoes and heat through
  • divide on to two plates
  • fry to eggs per person and place on top of potatoes and sausage
  • make your favorite country gravy and pour over eggs potatoes and sauge mixture
  • top with desired amount of shredded cheese
  • good served with tortillas, biscuits or buttered toast and fresh fruit
  • pinch
