BBQed Meat Loaf Recipe
This is our favorite meat loaf. Leftovers make excellent sandwiches. I love to serve it with homemade mashed potatoes.

Ingredients
  • 1 pound ground round, approximately
  • 1 chopped up onion
  • 2 T. chopped garlic
  • 4 slices bread or leftover buns
  • 1 or 2 eggs
  • milk
  • mustard
  • salt and pepper
  • oatmeal
  • bbq sauce
  • olive oil, small amt. if desired

Directions
  1. In a bowl, shred bread into pieces.
  2. Add enough milk to barely soak the bread.
  3. To softened bread, add eggs, squirt of mustard, onion, garlic, oil, salt and pepper and some bbq sauce, about 3/4 cup.
  4. Mix all together well.
  5. Place meat in a large bowl, break meat up into pieces.
  6. Add bread mixture and mix together well. I use a spoon, a wooden spoon is good.
  7. This is where I add the oatmeal. If it is soupy, add oatmeal until it looks right. Add less if it is dryer. Also you can add more bbq sauce if it looks like it is needed.
  8. Line pan or glass dish with tin foil, spray with pan spray. Put meatloaf in dish.
  9. Top with bbq sauce. Not too much or it will be too spicy since there is sauce in the mixture also.
  10. Bake at 400 degrees until done, an hour more or less. It should bubble in the middle some.
  11. BBQ sauce will get sticky on top when it is done.
  12. Remove from oven and let rest for about 10 minutes.
