How to make it

  • Chop fruit and veggies into large chunks, about an inch square. Keep them apart as we'll be cooking them in stages.
  • First heat some oil in a large (REALLY large) frying pan, and add the potato and parsnip.
  • Stir around for a couple of minutes, and add the sausages to the pan. Once the sausage and veggies are looking golden, add the onion.
  • And once that's looking cooked, add the fruit. It's best not to cook it too long in case it burns.
  • If the sausages look ready you can remove them from the pan.
  • Season with salt, pepper and rosemary and give it all a big stir.
  • Divide the sausages and fruit/veggie mixture between two plates. Serve with crusty wholemeal bread.
