How to make it

  • Mix the cornstarch and sugar together in a small bowl. Place berries and sugar mixture in a double boiler, mash berries (I use a potato masher, you don't want the berries completely pureed) Cook until berry mixture is thick and clear. Cool.
  • Slice remaining berries evenly into the prebaked pie shell. Pour cooled berry mixture evenly over berries in pie shell. Top with sweetened whipped cream
  • Garnish with fresh berries and mint sprigs.
