Florida Fish Chowder Recipe
Flavorful and satisfying as a main dish. Best made with a flavorful fish but any fish or seafood on hand can be used.

Ingredients
  • 1/2 Pound Salt Pork
  • 2 Pounds Filleted, Skinned Mullet or other fresh firm flavorful fish cut into cubes.
  • 1 Large Onion, chopped
  • 1 1/2 Cups Celery, sliced about 1/8" thick
  • 2 Large Carrots, sliced about 1/2" thick
  • 1 Can Evaporated Milk
  • 1 Cup Instant Potato Flakes
  • milk
  • salt and pepper to taste

Directions
  1. Dice the salt pork and brown in a heavy Dutch Oven.
  2. Drain and set aside.
  3. In 1 Tbsp. of the pork fat, saute the onion and celery until cooked but not brown.
  4. Add carrots and enough water to steam carrots. Cook, covered until carrots are tender.
  5. Add enough water to cover all contents well.
  6. Add fish and cook just until fish is done.
  7. Add potato flakes and bring to a boil to thicken.
  8. Add evaporated milk and heat but not to boiling or chowder will curdle. Adjust consistency if desired by adding more water or skim or whole milk but do not bring to a boil after milk is added.
  9. Sprinkle Bowls of chowder with Salt Pork Cubes and Serve.
