Quick Tuna Noodle Casserole Recipe
Nearly instant low-carb, low-fat tuna noodle casserole. South Beach friendly. Hits that comfort food spot!

Ingredients
  • 1 package Shiritake fettucini style noodles
  • 1 can tuna
  • 1 tablespoon mayonnaise
  • 2 wedges Laughing Cow Light cheese, french onion flavor
  • 1 cup veggies (I like green beans or broccoli)
  • 1/2 cup part-skim mozzarella cheese

Directions
  1. Rinse and drain the noodles. Cut into smaller pieces, if desired.
  2. Drain tuna.
  3. Place veggies in microwave-safe covered dish and cook or reheat. (With my microwave, I just press "fresh vegetable" or "frozen vegetable" as needed. Takes less than two minutes.)
  4. Add noodles and tuna to vegetables.
  5. Add mayo and stir around.
  6. Break up cheese wedges and place around dish.
  7. Sprinkle mozzarella on top.
  8. Microwave until melty and bubbly, about three minutes.
  9. Stir and enjoy! Share if you must.
