This is one of my favs, because it adds something special to plain ice cream. Add alchohol, whats not to like?

Ingredients
  • 1 1/2 cups red wine
  • 1/2 cup sugar
  • 1 cinnamon stick
  • 2 or 3 whole peppercorns
  • 1 or 2 strips of lemon zest
  • 2 large peaches, halved, and pitted
  • 1 pint vanilla ice cream
  • 2 mint leaves (optional)
  • handful corn flakes (optional)

Directions
  1. Combine wine, sugar, cinnamon, peppercorns, and zest in a sauce pot and reduce to med-high heat to a syrup 12-15 min. stirring as to not burn
  2. Remove all whole ingrediants from pot with a slotted spoon, or pour into a bowl through a collander, and return to pot..
  3. Discard whole ingrediants.
  4. Add peach halves and turn to coat with the sauce.
  5. Serve over ice cream.
  6. I like crunch to anything I eat, so I crumble corn flakes over the top!
  7. place a mint leaf on each for garnish, and you will be in ice cream heaven!!
