this recipe is something we came up with today for my mom. it's meant to be made with ingredients that are easy to find and inexpensive, relatively simple to make, and above all be delicious!

Ingredients
  • 4 Tbsp. butter
  • 1 onion roughly chopped
  • 1 can diced tomatoes (do not drain)
  • 1 can chicken stock
  • 1 pound shrimp peeled and chopped
  • 1 cup cooked rice
  • 1/2 cup heavy cream
  • 4 oz. cream cheese cut into small pieces
  • 1 tsp. minced garlic
  • 1/2 tsp. cayenne pepper
  • 1 tsp. kosher salt

Directions
  1. melt the butter in a large saucepan / pot on med / high heat.
  2. add the onion and stir occasionally.
  3. after about three minutes add the garlic and stir.
  4. after one minute add the chicken stock, can of tomatoes in thier juice then reduce the heat to medium.
  5. after five minutes, add the chopped shrimp, cayenne pepper and the cup of cooked rice.
  6. in five minutes more remove from heat and allow to cool slightly.
  7. puree in batches and strain back into the saucepan / pot with a sieve. after all has been strained turn heat back onto medium.
  8. slowly whisk in the heavy cream and the cream cheese pieces. add the salt, stir occasionally until hot and serve.
