Ingredients
  • 250g unsalted butter
  • 1 cup caster sugar
  • 2 table spoons of good golden syrup
  • 2 1/4 cup of rolled oats
  • 3/4 cups of desiccated coconut
  • 1 cup of corn flakes lightly crushed
  • 1/3 cup flaked almonds
  • 1 teaspoon mixed spice
  • 1/2 cup finely chopped dried apricots
  • 1 cup of mixed dried fruit

Directions
  1. preheat oven to slow 160c.brush a shallow 30x20 cm rectangular cake tin with melted butter or oil and line base and sides with baking paper
  2. combine butter, sugar and syrup in a small pan. stir over low heat5 minutes or until butter has melted and sugar has dissolved. remove from heat.
  3. place oats, coconut, cornflakes, almonds ,spices and dried fruit in large mixing bowl and stir. make a well in the centre pour butter and sugar mixture onto dry ingredients and combine thoroughly .
  4. press mixture into prepared tin using a sharp knife score slice into 18 fingers do not cut through to the base bake for 45 minutes or until golden. stand in pan for 15 minutes before turning out onto a board to cool. once cooled cut into fingers and enjoy
