Ingredients
  • 2 cups watermelon, seeded, coursely chopped
  • (Make bigger watermelon cubes if serving as a side salad)
  • 1 jalapeno pepper, seeded and minced
  • 1/2 sweet onion
  • 2 Tbs fresh cilantro
  • 2 c. crushed pineapple, no sugar added
  • 1 cucumber, seeded and finely chopped
  • 1 lime, juice and the zest
  • 2 Tbs balsamic vinegar

Directions
  1. Combine all ingredients.
  2. Chill for at least 3 hours to allow flavors to marry.
  3. Stir before serving.
  4. Serve as a dip w/tortilla chips.
  5. Use as a topping for grilled fish/chicken.
  6. Eat it as is because it is so delicious and fresh!
