chicken enchaladas

- whole chicken or equivalent shopping list
- 1 onion shopping list
- 2 cans of rotel ( green chile and tomatoes ) shopping list
- 1 can if enchalada sauce ( red or green ) shopping list
- shredded cheese shopping list
- 1 package corn tortillas shopping list
How to make it
- if using a whole chicken you can boil it untill done. You can also use can chicken or buy a whole chicken already cooked at the grocery store. Whichever you decide remove chicken from bone. Place in large bow, dice onion placing 1/2 in chicken mixture. Drain juice from rotel and add to chicken mixture. Fry corn tortillas for 2-3 seconds each side. Dip the corn tortilla in enchalada sauce . Roll up chicken mixture ( add some cheese if you want ) in corn tortilla unill
- your baking pan is full. Cover with rest of diced onion and drained can of Rotel and cover with shreeded cheese. Place in oven to melt cheese. I have also used garlic and onion cheese that I purchased in slices at the deli in my grocery store. Hope you enjoy.
