Rockstar Vegetarian Chili Recipe
This dish combines all those leftover ingredients in the panrty and veggie drawer. It is easy, and should definately be paired with cornbread- Jalapeno cornbread that is! Even the pickiest veggie heads I know enjoy this : )

Ingredients
  • 16oz extra firm tofu crumbled
  • 16oz can kidney beans undrained
  • 16oz can black beans undrained
  • 15oz can tomato sauce
  • 2cups chopped tomato
  • 4 cloves garlic minced
  • 1 medium onion chopped
  • 1 small bell pepper chopped
  • 1 small zuchini finely chopped
  • 1 carrot finely chopped
  • 1/4 cup water
  • 4tsp chili powder
  • 1tbsp dijon mustard
  • 1tsp dried Italian seasoning

Directions
  1. lightly saute onion, garlic until onion 'sweats'
  2. add tofu and turn up heat to medium to brown
  3. when tofu is turning golden add peppers, zuchini, and carrot. Cook for about 5 minutes more
  4. add tomato, tomato paste, beans, and spices
  5. boil, then turn down to light simmer. Cover and cook for 30 minutes
  6. Plate with minnced green onion and sweet bell pepper
  7. Enjoy!
  8. If you aren't vegan add cheese and sour cream- yum!
