How to make it

  • lightly saute onion, garlic until onion 'sweats'
  • add tofu and turn up heat to medium to brown
  • when tofu is turning golden add peppers, zuchini, and carrot. Cook for about 5 minutes more
  • add tomato, tomato paste, beans, and spices
  • boil, then turn down to light simmer. Cover and cook for 30 minutes
  • Plate with minnced green onion and sweet bell pepper
  • Enjoy!
  • If you aren't vegan add cheese and sour cream- yum!
