Leftover Turkey Or Chicken Soup Recipe
Use that leftover turkey or chicken in a delicious, nutritious, healthy and quick soup.

Ingredients
  • Handful of baby carrots (about 8)
  • One large celery stalk
  • 1/2 sweet onion (such as Vidalia)
  • 2 handfuls of rice (about 1/3rd cup)
  • 2 handfuls of diced turkey or chicken (about 1/2 cup)
  • Black pepper
  • 2 cups of water and 2 chicken bullion cubes
  • OR
  • 1 large can chicken broth

Directions
  1. Pour water into a medium saucepan and put in the two bullion cubes.
  2. Turn heat to medium
  3. Cut baby carrots in half, cut celery and onion into small pieces and add to saucepan.
  4. Add cut chicken or turkey to saucepan
  5. Add rice and black pepper (1 tsp if you want it spicy warm, more or less to taste)
  6. Stir and let simmer for 15 minutes. You don't need to touch it again - it will start a nice simmer after about 8 minutes, but the vegetables will still be crunchy when it is finished!
  7. Serve and enjoy!
