spinach sauce

- 1 packet of frozen spinach shopping list
- 2 eggs shopping list
- 2 tbs flour (more if you want it thicker, less for thinner) shopping list
- 1 1/2 cups milk shopping list
- nutmeg shopping list
- vegetable stock cube shopping list
- white pepper to taste shopping list
- a little butter shopping list
How to make it
- defrost spinach in microwave with a little butter
- place in frying pan with nutmeg and milk
- bring the milk to the boil and add vege stock cube
- stir constantly
- when the milk has boiled lower heat and slowly add a mixture of flour and milk (pre-mixed so it is not lumpy)
- when it is all combined add eggs - lightly beaten and stir vigorously
- add pepper to taste
- this dish is nice hot or cold
- if made thickly is a great sauce to go with potatoes, or if made thinly is nice with warm crusty bread as a soup
