How to make it

  • defrost spinach in microwave with a little butter
  • place in frying pan with nutmeg and milk
  • bring the milk to the boil and add vege stock cube
  • stir constantly
  • when the milk has boiled lower heat and slowly add a mixture of flour and milk (pre-mixed so it is not lumpy)
  • when it is all combined add eggs - lightly beaten and stir vigorously
  • add pepper to taste
  • this dish is nice hot or cold
  • if made thickly is a great sauce to go with potatoes, or if made thinly is nice with warm crusty bread as a soup
