Spinach Sauce Recipe
this is a dish my mum used to make when i was little, it can be thickened as sauce or made thinner as a great winter warmer

Ingredients
  • 1 packet of frozen spinach
  • 2 eggs
  • 2 tbs flour (more if you want it thicker, less for thinner)
  • 1 1/2 cups milk
  • nutmeg
  • vegetable stock cube
  • white pepper to taste
  • a little butter

Directions
  1. defrost spinach in microwave with a little butter
  2. place in frying pan with nutmeg and milk
  3. bring the milk to the boil and add vege stock cube
  4. stir constantly
  5. when the milk has boiled lower heat and slowly add a mixture of flour and milk (pre-mixed so it is not lumpy)
  6. when it is all combined add eggs - lightly beaten and stir vigorously
  7. add pepper to taste
  8. this dish is nice hot or cold
  9. if made thickly is a great sauce to go with potatoes, or if made thinly is nice with warm crusty bread as a soup
