Warm Zesty Salad

- 250g pasta of choice shopping list
- 1 punnet (1&1/2 cups) cherry tomatoes halved shopping list
- 1/2 green cucumber diced shopping list
- 4 medium potatoes diced with skin on shopping list
- 2 Tablespoons of olive oil shopping list
- 2 cups shredded lettuce shopping list
- 3 Tablespoons lemon juice shopping list
- 1 Table spoon lime juice shopping list
- 250g seafood highlighter (optional) shopping list
- 1 Tablespoon Vegeta spice shopping list
How to make it
- Place Shredded Lettuce, halved Cherry Tomatoes, diced cucumbers and seafood highlighter(optional) in a large salad bowl.
- Add lemon and lime juice, stir through and set aside.
- Put diced potatoes in a microwave proof bowl, cover with boiling water and cook on high for 5mins.
- Strain potatoes then add to a frypan. Sprinkle Vegeta Spice over the potatoes, Lightly fry on a medium heat in Olive Oil until Golden brown. Then add to the Salad Bowl.
- Cook Pasta as packet directions strain and add to the Salad Bowl.
- Lighty toss Salad until mixed evenly, serve immediately with steamed fish or BBQ'd chicken Breast Fillet.
