Summer Veggie Medley

- 1 zucchini diced shopping list
- 1 yellow squash diced shopping list
- ½ onion chopped shopping list
- 1 large or 2 medium bell peppers diced shopping list
- 2-3 fresh tomatoes diced shopping list
- 1-2 jalapenos diced shopping list
- clove of garlic chopped shopping list
- italian season mix or basil and oregano shopping list
- salt and Pepper shopping list
- ½ bag of egg noodles cooked shopping list
- 1 can of kidney beans rinsed and drained shopping list
- olive oil generous amount shopping list
- parmesan cheese as much as desired shopping list
How to make it
- Sautee onions in olive oil until tender on medium to medium high heat.
- Add peppers, jalapenos, garlic, zucchini and squash and cook until tender stirring occasionally.
- Add tomatoes, cooked noodles, kidney beans and seasonings.
- Stir to mix everything evenly and cook for about 10-15 minutes or until hot throughout allowing the egg noodles to take on the flavors.
- Serve with a generous amount of Parmesan cheese.
