How to make it

  • Sautee onions in olive oil until tender on medium to medium high heat.
  • Add peppers, jalapenos, garlic, zucchini and squash and cook until tender stirring occasionally.
  • Add tomatoes, cooked noodles, kidney beans and seasonings.
  • Stir to mix everything evenly and cook for about 10-15 minutes or until hot throughout allowing the egg noodles to take on the flavors.
  • Serve with a generous amount of Parmesan cheese.
