Crustless Potato Quiche

- 5 eggs, beaten shopping list
- 2 cups frozen hashbrowns, thawed (country style) shopping list
- 1 1/4 cups shredded swiss cheese shopping list
- 1/2 cup low fat cottage cheese shopping list
- dash of salt shopping list
- dash of pepper shopping list
- paprika ( I use Smokey paprika) shopping list
- 6 slices of low sodium bacon, cooked and crumbled shopping list
How to make it
- Combine the first 6 ingredients; stir well. Pour into a lightly buttered 9 inch pie plate or Quiche dish. Sprinkle with Paprika. Bake at 350 for 25 minutes or until set. Sprinkle cooked bacon on top. Bake for 5 minutes more. Let stand 5 minutes before serving.
