Savoury sweetcorn bread

- 2 cups self-raising flour shopping list
- 2 dessert spoons oil shopping list
- 2 eggs - beaten shopping list
- salt to taste shopping list
- 1 425g tin sweetcorn shopping list
- paprika shopping list
How to make it
- Sprinkle paprika onto sides & bottom of microwave bread pan.
- Mix self-raising flour, oil, eggs & salt in a bowl.
- Mix in the sweetcorn - thoroughly.
- Empty mixture into prepared microwave loaf/bread pan.
- Microwave on DEFROST for 9 min.
- Microwave on HIGH for 6 min.
- Notes: Silicon bread pans work a treat. They are totally non-stick, and the bread drops out easily. However, I still oil the breadpan with a drop of olive oil. (My preference).
- Microwave strengths vary. Test with a skewer into the bread when you think it’s ready. Remember that cooking continues for a couple of minutes after you remove it from the microwave therefore it must not be left to "dry out" in the microwave oven.
