How to make it

  • Sprinkle paprika onto sides & bottom of microwave bread pan.
  • Mix self-raising flour, oil, eggs & salt in a bowl.
  • Mix in the sweetcorn - thoroughly.
  • Empty mixture into prepared microwave loaf/bread pan.
  • Microwave on DEFROST for 9 min.
  • Microwave on HIGH for 6 min.
  • Notes: Silicon bread pans work a treat. They are totally non-stick, and the bread drops out easily. However, I still oil the breadpan with a drop of olive oil. (My preference).
  • Microwave strengths vary. Test with a skewer into the bread when you think it’s ready. Remember that cooking continues for a couple of minutes after you remove it from the microwave therefore it must not be left to "dry out" in the microwave oven.
