Modification of Food Channel's Chef @ Home's Bacon Potato Tart - I switched the potatos to yams and the cheddar cheese to parmesan
Ingredients
- 10 strips of bacon shopping list
- 1 medium sized sweet potato / yam - 0.5 cm slices shopping list
- 1/2 cup parmesan cheese, grated shopping list
- black pepper to season shopping list
How to make it
- Pre-heat oven to 350 F
- Line circular 6 inch diameter pie dish with parchment paper or aluminum foil
- Place bacon strips, starting from the center out in a radial pattern - cover the entire bottom - half of each bacon strip should be hanging out of the dish
- Season bacon with pepper
- Place one level of yam slices
- Add thin layer of parmesan cheese
- Layer with yam and cheese until dish is filled
- Fold the bacon over the top, again, in a radial pattern
- Press down on contents of dish
- Cover with aluminum foil
- Bake for 3 hours in 350 F oven
- Optional step: Run a marathon to clear up your arteries in preparation
- Enjoy a SMALL piece
