Italian Creme Cake Recipe
My Mom has been making this cake for about 40 yrs. or so....its definitely a family favorite and is soooo yummy!!!

Ingredients
  • 1 stick margarine
  • 1/2 c. Crisco
  • 2 c. sugar
  • 5 egg yolks
  • 5 egg whites, beaten stiff
  • 2 c. cake flour
  • 1 tsp. baking soda
  • 1 c. buttermilk
  • 1 tsp. vanilla
  • 1 c. coconut
  • 1 c. chopped pecans
  • Icing:
  • 8 oz. cream cheese, softened
  • 1/2 stick margarine, softened
  • 1 box 10-x powdered sugar
  • 1 c. coconut
  • 1 c. chopped pecans

Directions
  1. Prepare cake pans by spraying with Bakers Joy.
  2. Cream margarine, Crisco and sugar. Beat until smooth.
  3. Add egg yolks and beat until well blended.
  4. Combine flour and soda; add to creamed mixture alternately with buttermilk.
  5. Add flavoring, nuts and coconut.
  6. Gently fold in beaten egg whites.
  7. Bake at 350 deg. for 20 min. for layers or 40 min. for sheet cake or until toothpick inserted in middle comes out clean.
  8. Makes (3) 8 or 9-in. layers or one 9 x 13 sheet.
  9. When cake has cooled - Beat together icing ingredients and spread on cooled cake.
