Ingredients
  • BARBECUED LEG OF LAMB
  • 1 6 lb leg of lamb, boned and flattened
  • Marinade:
  • 2 Tbsp vinegar 1 clove garlic, crushed
  • 1/2 c olive oil 1 tsp salt
  • 1/2 tsp pepper (white or black)
  • Sauce:
  • 2 1/2 c chili sauce 1 bay leaf
  • 1 tsp chili pepper 2 tsp hot sauce
  • 3/4 c olive oil 1 tsp dry mustard
  • 1/2 c lemon juice 1/2 c water
  • 1 Tbsp brown sugar 2 c finely chopped onion
  • 2 Tbsp tarragon vinegar 2 cloves garlic, minced
  • 1 tsp salt

Directions
  1. The Marinade:
  2. Combine all sauce ingredients, and marinate the lamb in this mixture for 2 hours. Broil over charcoal embers for 1 1/2 to 2 hours, turning frequently and brushing every 5 minutes with this hot barbecue sauce:
  3. The Sauce:
  4. Combine ingredients in saucepan. Bring to a boil; reduce heat and simmer for 15 minutes. Best served with lamb, chicken, spare ribs.
