How to make it

  • Make up the muffin mix as per its instructions, but don't cook them in faffy little tins, use a loaf tin and cook all the mix together.
  • Break into chunks in a bowl and leave to cool, preferably overnight so it goes a bit stale.
  • Heat oven to 190C
  • Heat milk, sugar and cinnamon to just below boiling point, add beaten egg.
  • Pour custard over broken muffins, top with single cream
  • Bake for 25 - 30 minutes (best if not completely 'set').
