Emergency Pudding Recipe
A last minute thrown together pudding that I made out of store cupboard ingredients when a friend invited us for dinner - turned out particularly well!

Ingredients
  • 1 pack muffin mix (Betty Crocker blueberry works very well)
  • 1 cup milk
  • 1tbsp sugar
  • pinch cinnamon
  • 1 egg
  • 1 cup single cream

Directions
  1. Make up the muffin mix as per its instructions, but don't cook them in faffy little tins, use a loaf tin and cook all the mix together.
  2. Break into chunks in a bowl and leave to cool, preferably overnight so it goes a bit stale.
  3. Heat oven to 190C
  4. Heat milk, sugar and cinnamon to just below boiling point, add beaten egg.
  5. Pour custard over broken muffins, top with single cream
  6. Bake for 25 - 30 minutes (best if not completely 'set').
