How to make it

  • Wash and dry 30 cherry tomatoes
  • Cut off slice from bottom
  • Remove seeds and pulp
  • Drain and refrigerate
  • Place heart of palms in in food processor and chop coarsely
  • Combine juice of 1/2 lemon, vinegar, palms, scallions, olive oil, and parsley, and pepper.
  • Stuff tomatoes and chill
