Fluffy Banana Cake Recipe

How to make it

  • Use mixer to mash bananas.
  • Sift together flour, baking powder, soda, and salt.
  • Put in large bowl shortening, sugar, eggs and vanilla.
  • Beat with mixer for 1 1/2 minutes.
  • Add sifted ingredients alternately with mashed bananas while beating at low speed.
  • Beat only enough to blend.
  • Pour batter into 2 9 inch layer pans that have been greased and floured.
  • Bake at 350 degrees for 30 - 35 minutes.
  • Remove from pan. Cool.
  • Fill and top with whipped cream.
  • (Makes 1 large cake.)
