How to make it

  • Preheat oven to 400 f.
  • beat the eggs,sugar,zest,and pinch of salt in a bowl untill pale and thick.
  • Sift flour over mixture and lightly fold in.
  • Gently fold in butter,juice and flower watter in using.
  • grease a madeleine tin and drop a teaspoon of butter into each of the molds.
  • repeat with any remaining mixture.
  • Turn out ionto a wire rack and sprinkle with powder sugar.
