I have never liked chili, till i tried this recipe. It's has great flavor and is really hearty. I like that you can swap out the meat for a vegetarian option.

Ingredients
  • 1 to 1 ½ Onion, (depending on how much onion you like in your chili)
  • 1 lb. Ground Meat (ground turkey or 1 lb of Boca Burger ground burger)
  • 2 cans Diced Tomatoes (28 oz. total)
  • 2 cans tomato sauce (16oz. total)
  • 4 cans Kidney Beans (48-60oz - the big large cans), don’t drain
  • 1 can Hominy (28 oz. can ), drained
  • Carroll Shelby's Original Texas Chili - follow directions on adding spices.
  • Green Onion (for garnish)
  • Chedder Cheese (for garnish)

Directions
  1. Sautee the onion.
  2. Stir in 1 lb of the meat of your choice, brown with the onions.
  3. Add all the cans of Tomatoes, Beans, and Hominy.
  4. Follow the directions of adding spices from the Carroll Shelby's Original Texas Chili spice pack.. The package does come with some other packs to make the chili thicker, it's up to you, but the chili is already pretty thick.
  5. Stir well.
  6. Simmer till heated through.
  7. Serve hot and garnish with green onion and cheese!

Alterations


The vegetarian meat alternative makes this chili great for people on Weight Watchers. I think it was about 1 to 2 points per bowl without the cheese.


You can substitute other beans instead of kidney. Once we made it with half the kidney beans and the rest with black beans...still hearty and good.
