Smoked Mozzarella Pasta Salad Recipe
A mix of artichoke hearts, pasta, roasted red peppers, smoked mozzarella cheese, baby spinach leaves, green chilies, pine nuts, garlic combined with Parmesan cheese and mayonnaise. Delicious. Old recipe from Southern Living.

Ingredients
  • 1 (6 ounce) jar marinated artichoke hearts
  • 1 (8 ounce) package rotini pasta, cooked
  • 1 (7 ounce) jar roasted red bell peppers, drained and cut into strips
  • 1/2 pound smoked mozzarella cheese, cut into 1/2-inch cubes
  • MAY USE SMOKED GOUDA OR CHEDDAR CHEESE INSTEAD
  • 1/2 (5 ounce) bag baby spinach leaves (about 1-1/2 cups)
  • 1/2 of a 4 ounce can chopped green chilies, drained
  • 1/2 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup pine nuts, toasted
  • 1 garlic clove, minced
  • 1/2 teaspoon black pepper
  • MAY GARNISH WITH TOMATO WEDGES, OR BABY SPINACH LEAVES
  • OPTIONAL: chopped fresh green onions

Directions
  1. Drain the artichokes, reserving marinade
  2. Cut artichokes into strips
  3. Place in a large bowl
  4. Add pasta and next 4 ingredients, gently tossing
  5. STIR together reserved artichoke marinade, mayonnaise, and next 4 ingredients until blended
  6. Add to the pasta mixture, stirring to combine
  7. Cover and chill
  8. May garnish before serving
