Chicken Enchilada Casserole Recipe
A quick and easy mexican style casserole dish. Pair it up with Pinto beans w/added cumin, chili powder, onions,and chopped cilantro!

Ingredients
  • 4 boneless chicken breasts
  • 1 can of cream of mushroom
  • 1 can of cream of chicken
  • 1 can of cream of mushroom with cream of chicken
  • 1/2 can of chicken broth
  • 1can of drained can of mild or spicy Rotel...your preference
  • 1 1/2 cup of Mexican shredded cheese
  • 3/4 of a standard bag of cheese Doritos

Directions
  1. Preheat oven to 375. Cube chicken breasts and season w/garlic powder, seasoning salt and pepper and cook thoroughly in pan. While chicken is cooking, in a large bowl....add all canned ingredients and once chicken is done combine them all together in bowl. In a 13x9 pan, layer the bottom with the Doritos (press them down slightly). Pour mixture over the Doritos and cover with the Mexican cheese. Place in oven and bake for 20 minutes. After the 20 min, I usually put the oven on broil for a couple of minutes. It will thicken up the cheese on top.
