Enchilada Sauce Recipe
This was developed/discovered in a quest for a simple homemade sauce that was lower in sodium than the canned stuff.

Ingredients
  • 8 large Ancho or New Mexico Chiles
  • 1 Arbol pepper
  • 1 box Chicken Broth
  • 1 can Ro*Tel
  • 3 cloves garlic
  • 1 sm onion chopped
  • 1 TBSP Lt Brown Sugar
  • 1 TBSP vegetable oil
  • 2 tsp ground cumin
  • 1 tsp black pepper

Directions
  1. Stem and seed Chiles
  2. Put all ingredients into a pan
  3. Bring to a boil, boil 2 minutes
  4. Cover and let stand 1 hour
  5. In batches, fill blender about half full and blend until smooth
  6. Add 1 TBSP Cider Vinegar
  7. Adjust salt to taste
