How to make it

  • Gradually stir milk into yolks in a saucepan.
  • Add 1/4 cup of the sugar.
  • Cook and stir over medium heat till thick and bubbly.
  • Remove from heat and stir in crackers,coconut and vanilla.
  • Pour into 1-quart casserole.
  • Beat the albumen till soft peaks form.
  • Gradually add remaining 1/4 cup sugar,beat till stiff peaks form.
  • Spread meringue over hot pudding.
  • Bake in a 350 degree oven for 12 to 15 minutes.
