Ingredients
  • Remove rind and seeds from ripe melons.
  • Cut melon into small pieces.
  • Add just enough water to prevent sticking.
  • Boil until soft,then press through a sieve.
  • Measure,for each quart of pulp add:
  • Add from 1 to 1-1/2 cups sugar
  • 1 Tablespoon Lemon Juice
  • 1 teaspoon Cinnamon(or) other spices of choice--say nutmeg,pumpkin pie spice,but nothing to over power the flavor of the cantaloupe.
  • Boil until thick,stirring often to prevent sticking.
  • Pour while hot into hot pint canning jars.
  • Seal.
  • Process 10 minutes in a hot water bath.
