Edamame-tofu Soup Recipe
This soup is warm and comforting on a cold day and is satisfying without being calorie-heavy.

Ingredients
  • 1 cup shelled edamame beans
  • 1 block firm or extra-firm tofu
  • 0.5 head lettuce (regular Romaine)
  • 2 tablespoons white miso (or to taste)
  • 6 cups water
  • Optional last-minute add-ins: thinly sliced carrot or mushrooms

Directions
  1. Set water on stove to boil.
  2. Rinse tofu and press under a heavy plate to remove excess water. Cut into small dice.
  3. Shred lettuce into bite-sized pieces.
  4. Once water is boiling, reduce heat and stir in miso.
  5. Add edamame, tofu, and lettuce. Cook until all ingredients are heated through and serve. Lettuce will be soft.
