Edamame-tofu Soup

- 1 cup shelled edamame beans shopping list
- 1 block firm or extra-firm tofu shopping list
- 0.5 head lettuce (regular Romaine) shopping list
- 2 tablespoons white miso (or to taste) shopping list
- 6 cups water shopping list
- Optional last-minute add-ins: thinly sliced carrot or mushrooms shopping list
How to make it
- Set water on stove to boil.
- Rinse tofu and press under a heavy plate to remove excess water. Cut into small dice.
- Shred lettuce into bite-sized pieces.
- Once water is boiling, reduce heat and stir in miso.
- Add edamame, tofu, and lettuce. Cook until all ingredients are heated through and serve. Lettuce will be soft.
