Cams Onion Soup

- - 1/4 cup of butter (unsalted) shopping list
- - 6 medium onions (approx 2 - 2 1/2 lbs) thinly sliced shopping list
- - 1 clove of garlic, finely diced shopping list
- - 1 tsp of sugar shopping list
- - 6 - 8 tsp of flour shopping list
- - 8 cups of beef broth (may add more water depending on saltiness of broth) shopping list
- - 1 tsp of Dijon mustard or 1 tsp dried mustard shopping list
- - 1/4 tsp of nutmeg shopping list
- - 3 tsp of worcestershire sauce shopping list
- - 1/2 to 1/4 cup of white wine or few drops of lemon juice to taste shopping list
- - 2 cups of croûtons (easy to make; use your favorite bread toasted then diced into crouton squares) shopping list
- - Sliced swiss cheese (as desired) shopping list
- - parmesan cheese (as desired) shopping list
How to make it
- - In large kettle, melt butter, add onions, garlic and sprinkle w/ sugar. Saute over medium heat stirring occasionally for first 30 minutes. Reduce heat and cook till lightly browned (approx 20 minutes).
- - Sprinkle flour over cooked onions
- - Add broth, Dijon mustard, Nutmeg and Worcestershire sauce
- - Simmer over medium/low heat for 15 minutes
- - Add White Wine (or lemon juice)
- - Ladle into oven-proof crock style bowls till approx 3/4 full
- - Add croutons
- - Lay out slice of Swiss Cheese across croutons
- - Sprinkle on desired amount of Parmesan Cheese on top
- - Place under HI broiler until cheese bubbly and browned ... DO NOT LEAVE UNATTENDED!
