Ingredients
  • - 1/4 cup of butter (unsalted)
  • - 6 medium onions (approx 2 - 2 1/2 lbs) thinly sliced
  • - 1 clove of garlic, finely diced
  • - 1 tsp of sugar
  • - 6 - 8 tsp of flour
  • - 8 cups of beef broth (may add more water depending on saltiness of broth)
  • - 1 tsp of Dijon mustard or 1 tsp dried mustard
  • - 1/4 tsp of Nutmeg
  • - 3 tsp of Worcestershire Sauce
  • - 1/2 to 1/4 cup of white wine or few drops of lemon juice to taste
  • - 2 cups of croĆ»tons (easy to make; use your favorite bread toasted then diced into crouton squares)
  • - Sliced Swiss Cheese (as desired)
  • - Parmesan Cheese (as desired)

Directions
  1. - In large kettle, melt butter, add onions, garlic and sprinkle w/ sugar. Saute over medium heat stirring occasionally for first 30 minutes. Reduce heat and cook till lightly browned (approx 20 minutes).
  2. - Sprinkle flour over cooked onions
  3. - Add broth, Dijon mustard, Nutmeg and Worcestershire sauce
  4. - Simmer over medium/low heat for 15 minutes
  5. - Add White Wine (or lemon juice)
  6. - Ladle into oven-proof crock style bowls till approx 3/4 full
  7. - Add croutons
  8. - Lay out slice of Swiss Cheese across croutons
  9. - Sprinkle on desired amount of Parmesan Cheese on top
  10. - Place under HI broiler until cheese bubbly and browned ... DO NOT LEAVE UNATTENDED!
