How to make it

  • Combine the salt, lemon juice, and olive oil in a large glass bowl
  • Using a garlic press, add the garlic cloves to the mixture and set aside
  • Peel the cucumber and cut into thin round slices
  • Cut the bell pepper into long strips
  • Cut the onion into thin strips that are half the length of the bell pepper strips
  • Add the cucumber slices, bell pepper strips, and onion strips to the garlic and olive oil mixture
  • Toss to coat the vegetables and set aside to marinate
  • Cut the stems off of the cilantro and coarsely chop the cilantro leaves
  • Cut each of the green olives in half
  • In a large bowl combine the lettuce, feta cheese, green olives, and cilantro
  • Pour the entire bowl of vegetables and marinade/dressing on top of the lettuce
  • Mix well and allow the salad to sit for 10 to 15 minutes before serving
  • **Note that more or less oil, salt, garlic, or lemon juice can be used according to taste
