Apricot Basil Pork Roast

- 1 to 1 1/2 pound pork roast tenderloin shopping list
- 2 cups chicken stock shopping list
- 1/2 cup water shopping list
- 1 cup (or more) apricot preserves shopping list
- 3 to 4 pounds red potatoes, cleaned and quartered shopping list
- 1 large onion, finely chopped shopping list
- 3 to 4 carrots, peeled and sliced into 1/2" pieces shopping list
- 6 cloves garlic, smashed and chopped shopping list
- 1 tbsp fresh tarragon, minced (1 tsp dried, crumbled) shopping list
- 1 tbsp fresh basil, minced (1 tsp dried, crumbled) shopping list
- 1/2 tbsp rosemary, minced (1/2 tsp dried, crumbled) shopping list
- 1/8 tsp ground cayenne pepper shopping list
- 1/2 tsp black pepper shopping list
- salt to taste shopping list
How to make it
- Combine all in large crockpot. Cook on high for 2 hours.
- Reduce heat to low. Continue cooking for 5 to 6 hours.
- Strain remaining liquids. They make a good gravy if so desired.
