Ingredients
  • 1 to 1 1/2 pound pork roast tenderloin
  • 2 cups chicken stock
  • 1/2 cup water
  • 1 cup (or more) apricot preserves
  • 3 to 4 pounds red potatoes, cleaned and quartered
  • 1 large onion, finely chopped
  • 3 to 4 carrots, peeled and sliced into 1/2" pieces
  • 6 cloves garlic, smashed and chopped
  • 1 tbsp fresh tarragon, minced (1 tsp dried, crumbled)
  • 1 tbsp fresh basil, minced (1 tsp dried, crumbled)
  • 1/2 tbsp rosemary, minced (1/2 tsp dried, crumbled)
  • 1/8 tsp ground cayenne pepper
  • 1/2 tsp black pepper
  • salt to taste

Directions
  1. Combine all in large crockpot. Cook on high for 2 hours.
  2. Reduce heat to low. Continue cooking for 5 to 6 hours.
  3. Strain remaining liquids. They make a good gravy if so desired.
