Creamy Chicken Noodle Casserole Recipe
Using a pre-cooked rotisserie chicken from your local grocery store adds tons of flavor and cuts down on prep-time. Serve with a green salad and rolls.

Ingredients
  • 12 oz. pkg. rotini pasta
  • 1 pre-cooked rotisserie chicken
  • 2 Tb oil
  • 1 medium vidalia or sweet onion, diced
  • 2 or 3 ribs celery, sliced
  • 1/2 cup each red and green bell pepper, diced
  • 1 can cream of chicken soup
  • 1 can cream of celery soup
  • 8 oz. sour cream
  • 1 tsp garlic pepper
  • 1 tsp season salt
  • 8 oz. can sliced water chestnuts, drained and chopped
  • 2 cups colby and monteray jack shredded cheese blend

Directions
  1. Preheat oven to 350.
  2. Place pot of water on high heat to boil.
  3. Prep onion, celery, peppers and set aside.
  4. Skin, de-bone and chop chicken, set aside.
  5. Cook pasta according to directions.
  6. Saute' veggies until tender.
  7. In large bowl, combine soups, sour cream, seasonings, and water chestnuts and cheese.
  8. Stir in chicken, veggies and well drained pasta and pour into large, greased casserole dish.
  9. Bake 45 minutes.
