How to make it

  • Chop candied fruit very fine. Cream butter well in a large bowl, then add sugar gradually and continue creaming until light and fluffy. Beat in egg yolks. Combine lemon juice and evaporated milk and add slowly to egg mixture. Reserve 1/4 cup flour. Sift remaining flour with the soda, salt and spices. Stir all at once into egg mixture. Mix the reserved 1/4 cup flour with the fruit, raisins and pecans to coat well. Add to egg mixture stirring to blend thoroughly. Fold in egg whites which have been beaten stiff but not dry. Drop by teaspoon onto an aluminum foil covered baking sheet. Bake at 325 degrees until lightly browned, about 20-25 minutes. Remove immediately from baking sheet to racks to cool.
