Zuccini And Carmalized Onion Tart Recipe
This is such a delicious tart. I took it to a party to serve with lamb, and everyone loved it. It would also be a great lunch or brunch dish.

Ingredients
  • 1 single refrigerated pie crust
  • 1 sweet onion (Walla Walla or Vidalia)
  • 1 medium zuccini
  • 1 roma tomato
  • 4 sprigs fresh thyme
  • 1/3 c. asiago cheese
  • 1 egg
  • parmasian

Directions
  1. Slice onion thinly.
  2. Carmalize slowly in olive oil and butter until very soft and sweet.
  3. Add zuccini and continue to carmalize vegatables.
  4. Add thyme, salt and pepper.
  5. When vegatables are soft, mound in the center of the pie crust.
  6. Slice tomato over other vegatables.
  7. Shred asiago on top of veg.
  8. Fold up the edges of the crust.
  9. Brush crust with egg, and sprinkle with parm.
  10. Bake 375 for 30 min. until golden brown.
