Historically, "Wassail" was a salutation of wishing health and happiness to a person in England.

Ingredients
  • 2 cups water
  • 1 Tbs ginger
  • 1 Tbs nutmeg
  • 6 whole cloves
  • 6 whole allspice
  • 2 sticks cinnamon
  • 1 gallon apple cider
  • 3 cups sugar
  • 1 1/2 cups firmly packed brown sugar
  • 1 cup brandy or to taste

Directions
  1. Cook water, ginger, nutmeg, cloves, allspice, cinnamon in 6 quart pot or even better cook them in a crock pot, letting the spices simmer all day.
  2. Nest add the following apple cider, sugar and brown sugar and heat, stirring the sugar to be sure that it dissolves.
  3. Simmer over low heat for 5 to 10 minutes. Be sure it's hot before the party. Pour into punch bowl and add the cup of brandy or whatever amout is desired.
  4. Leave whole spices in the punch bowl. It adds orginality.
